The 2021 Vivaltus was produced with a blend of 90% Tempranillo and 10% Cabernet Sauvignon from old vines in the villages of La Aguilera, Fuentenebro, Moradillo de Roa, Anguix, Atauta and Curiel. The uncrushed grapes from each vineyard were moved by gravity to the tanks, where they fermented with selected neutral yeasts, with soft pump-overs, looking for a silky texture of the tannins. Malolactic was also in stainless steel, and 90% of the wine aged in barrels, 15% of them new, and 10% was in amphorae for one year. Like all their 2021s, this is subtle, elegant, harmonious and balanced, floral and perfumed. This is like a more elegant version of Lafleur, with more finesse and especially much finer tannins and finer-boned. It comes in at 14% alcohol, with a pH of 3.76 and 5.05 grams of acidity. All the 2021s show superb balance and are evolving nicely at a very slow pace, so they should be long lived. 17,147 bottles, 1,000 magnums and 102 double magnums were produced. It was bottled in June 2023.
