"Tom Barry shows his intelligence and ambition in this bold winemaking collaboration with Germany’s Dr Ernie Loosen. Chasing a more luscious, slippery texture than typical Clare Valley Riesling, it ferments fruit from Barry's Wolta Wolta vineyard in stainless steel, then rests on yeast lees in a 3,000-litre German oak cask for 16 months, before being transferred to sit on fine lees in stainless steel for another month. This heightens exotic notes of pithy citrus, quince, a lick of oyster shell, melon and nectarine, along with slatey minerality – and this lush fruit profile benefits from an extraordinary, supple backbone of acidity that both elongates and enhances the palate.
