"Inaugural vintage of this wine, from clay limestone soils in the Ormes de Pez vineyard. Gentle apricot and exotic fruits character, plenty of textural interest, wtih a juicy signoff. No new oak here, this is unfussy with promise for an impressive addition to the white wine lineup of the Médoc. Already bottled, for a delivery on September. 3.16 pH. Harvest August 27 to September 3. 4ha (planted not field grafted), aged in a mix of barrels and amphora, with lees stirring." (04/2026)

"A promising first vintage for this exciting new project. First year production of planted Sauvignon Blanc and Sémillon inside St-Estèphe, replacing Merlot and Cabernet Sauvignon across 4ha (80% Sauvignon Blanc and 20% Sémillon in the vineyard). Green apples with quite crisp Sauvignon Blanc aromas, grassy and slightly herbal. Clean and pure on the palate, not overly zingy as the acidity is in perfect balance with the green orchard fruit - very slightly tart but really cool with a chalky, stony grip on the finish. Harmonious with some peach and pear drop florality elements too. Fine, elegant and not oaky with immediate enjoyment - a fresh, friendly summer sipper with no big pronouncement of any one element. 3.16pH. 30% fermenting in barrel (no new oak), 30% in vats, 30% in amphora. Picked just before the rain on 30% clay and limestone, cooler terroir. Bottled 7th April." - Georgina Hindle (04/2026)

"4 Hektar Rebfläche in der Appellation St-Estèphe, mit lehmigen und kühleren Terroirs. Der sechsmonatige Ausbau erfolgt auf der Feinhefe in Barriques zweiter Belegung sowie in TAVA-Amphoren. Das Bouquet zeigt erfrischende Noten von Zitrusfrüchten und weißen Blüten und hebt so die charakteristischen Merkmale der Rebsorten hervor, während der Ausbau im Hintergrund bleibt. Am Gaumen hat der Wein eine gewisse Breite und Schwung. Er spiegelt die olfaktorischen Eigenschaften gut wider und wird von einer strukturgebenden Säure unterstützt. The 2025 Ormes de Pez Blanc is a new wine in the range. Ripe pear, lemon confit, white pepper, slate, mint and white pepper lend notable brilliance throughout. Drink this airy, aperitif-styled white over the next few years. This is a terrific debut. (04/2026)

Bright citrus zest, grapefruit, and honeyed flowers all emerge from the 2025 Château Ormes De Pez Blanc, the first vintage of this cuvée, which comes from four hectares of vines. A blend of 55% Sauvignon Blanc and 45% Sémillon that will spend six months in equal parts barrels, cuvée, and amphora, it's medium-bodied on the palate, nicely balanced, juicy, and shows terrific purity and freshness. The 2025 Ormes de Pez Blanc is a new wine, already in bottle. Notes of fresh yellow apples, lemonade, and crunchy pears rocket from the glass, plus hints of white pepper and fennel seed. The medium-bodied palate is crisp and bright with bags of orchard fruit and citrusy flavors, finishing chalky. Yum! The blend is 55% Sauvignon Blanc and 45% Sémillon. It has a pH of 3.16 and the alcohol is 13.2%. It was aged 6 months in French oak (no new oak) and in amphorae. Only 3,000 bottles were made. (04/2026)

Medium- to full-bodied, juicy and supple, it’s built around a core of fruit with good depth, animated by fresh, lively acidity through the mid-palate and concluding with a long, mouthwatering finish.
